Tony Huang, Tim Pope, and partner Aimee-Louise Pope didn’t sit idle during the long Covid lockdowns but set about refining their ideas and bringing to life a bar concept that speaks to their beliefs on what is hospitality.
For those of you who have never heard of it before the concept is simple. Four bar teams are given a spirit and a common waste ingredient found in a bar and are tasked with finding a way to utilise the two together in a cocktail.
The Exchange are excited to welcome new QLD Brand Ambassador, Jack Stacey to the role which he commenced in May 2022 following the relocation of Brady Retschlag to Melbourne.

Hitting the ground running in 2021, Josh Davies was not discouraged by the tightening restrictions upon his arrival in Sydney – moving from Melbourne no less! The new NSW Brand Ambassador for The Exchange says “working in the industry abroad and now back home has made me realise that no matter where you are or where you work in the world, there will be some form of 6 degree of separation with a bartender somewhere…”
Now more than ever it is important to be having the conversation about mental health and wellbeing in our industry. The Exchange are excited to announce the launch of The Healthy Bartender Project – where Brand Ambassadors are now able to provide workshops, tools and resources that put staff health and wellness in the spotlight.
Twenty years on, Erica is looking to evolve the status of women in the industry. Together with local venue owner Marcus Motteram of Hains & Co. the concept of ‘Pouring Ribbons’ was born. A liquor focused, education and networking platform “by women, for women.”

During lockdown, the Social Exchange was live each night at 6pm AEDT Tuesday – Saturday, with The Exchange Brand Ambassadors across Australia hosting their own episode weekly. Each episode averaged over 1,600 views and over 30 comments from the trade community.
