Since opening in August 2023, Tucano’s has offered its tiki-inspired menu to thousands of guests (and a massive Sydney Bar Week Tiki Face-Off party). They have recently launched a brand new drinks menu and this one from Bec Bayley is a delicious sherry-forward strawberry refresher that will fly over the bar. Pop in and say hi over the summer!

7.5ml amontillado sherry
20ml clarified strawberry
15ml sugar
5ml 10% malic solution
Garnish with isomalt dome dusted with strawberry sugar and sesame seeds
