Mary Mary is an intimate new cocktail bar at The Tasman Hotel. With world renowned cocktail and spirits creatives, Proof & Company and one of Australia’s most awarded bartenders, Charlie Ainsbury leading the set-up, this is bound to become one of Tassie’s top cocktail destinations.

Set within the deep old sandstone walls of Hobart, the name Mary Mary comes from the building itself, the former St Mary’s hospital, dating back to the late 1800s, now reimagined as part of The Tasman and Parliament Square.

With a setting steeped in history, Mary Mary will bring a modern approach to fine drinking in Tasmania.

The knowledgeable bar team is led by Bar Manager Ronán Kavanagh (pictured above), who brings both international experience behind the bar and recognition for his work on local distilling projects at Charles Oats Distilling.

Mary Mary’s drinks menu is rooted in classic cocktails enriched by native ingredients and the expert execution of the bartenders for an experience that highlights Tasmania’s exceptional local craftspeople and distillers. The signature cocktails reflect an ambitious re-imagining of the world’s great cocktails, including a Classic Martini made with Tasmanian gin or vodka, fresh vermouth, and a lick of aromatised verjuice, served with seasonal accoutrements made in house.
