Starting out as a humble little distillery in the suburb of Fyshwick, Canberra in 2017 Big River has continued to rapidly grow and boom since opening its doors to the public in 2018.
An urban distillery in the heart of Fremantle’s bustling West End, Republic of Fremantle was established in 2019 and now has three gins on offer. You can sample at them at the upcoming Indie Spirits Tasting during Sydney Bar Week.
Regardless of where the whiskey is made, or which family generation is in charge, the family motto remains the same as when Pappy first started the business. “At a profit if we can, at a loss if we must, but always fine bourbon.”
